Romas, Capers, Olives and Mozzarella
serves 4
Ingredients
- 10 ea Roma tomatoes, sliced 1/4-inch thick
- 2 C red onion, sliced thin
- 1/4 C fresh basil, chopped
- 2 T capers
- 1 T kalamata olives, pitted & chopped
- 2 T white wine vinegar
- 1 t olive oil
- 1/4 C fresh mozzarella, shredded
- salt and pepper
Instructions
- Whisk the oil, vinegar, salt and pepper together in a large bowl.
- Mix the tomatoes, onion, basil, capers and olives into the dressing.
- Plate, garnish with the mozzarella, and serve.
